Ingredients
Scale
- 2 medium-large ripe bananas (about 1 cup mashed)
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract (optional)
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt (or ¼ tsp if using salted butter)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×4-inch loaf pan with parchment paper and lightly grease exposed edges.
- In a large bowl, beat butter and sugar on medium-high for 2-3 minutes until pale and fluffy.
- Add eggs one at a time, mixing fully after each addition. Stir in vanilla extract.
- Mash bananas in a separate bowl until mostly smooth.
- In another bowl, whisk flour, baking soda, and salt.
- Gradually fold dry ingredients into the wet mixture, alternating with mashed bananas. Mix until just combined.
- Pour batter into the prepared pan. Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy!
Notes
- If your bananas are small, use slightly more mashed banana (up to 1 ¼ cups).
- Reduce sugar to ½ cup for a less sweet loaf.
- Add mix-ins like chocolate chips or nuts for variation.
- Store at room temperature for 3 days, or freeze slices for up to 3 months.
