  • ¼ cup ketchup or BBQ sauce

  • ¼ cup milk (whole or plant-based alternative)

  • 1 egg, beaten

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon Worcestershire sauce

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon smoked paprika (optional)

For the Topping:

  • 2 cups mashed potatoes (classic or flavored with garlic and butter)

  • ¼ cup shredded cheddar cheese (optional)

  • Chopped fresh parsley (for garnish)

  • Gravy (optional, for extra richness)


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin or line it with silicone or foil cupcake liners.

  2. Mix Ingredients: In a large bowl, combine ground beef, breadcrumbs, ketchup, milk, egg, onion, garlic, Worcestershire sauce, salt, pepper, and smoked paprika. Mix gently until combined.

  3. Fill Muffin Tin: Divide the mixture evenly among the muffin cups, pressing down gently to fill each mold.

  4. Bake: Bake for 20-25 minutes, or until the internal temperature reaches 160°F (71°C) for beef or 165°F (74°C) for poultry.

  5. Prepare Topping: While baking, prepare mashed potatoes.

  6. Assemble: Remove meatloaf cupcakes from the oven, let cool slightly, then top with mashed potatoes. Garnish with parsley, cheese, or gravy.
