- 1 lb ground beef
- 4 medium Russet potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups frozen mixed vegetables (peas, carrots, corn)
- 1 cup whole milk (or heavy cream for extra richness)
- 2 tbsp butter
- 1 tsp dried parsley
- 1 tsp dried basil
- Salt and pepper, to taste
- Shredded cheddar cheese (optional, for topping)
Instructions
- In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the onions and garlic to the pot and sauté for 2-3 minutes until fragrant.
- Add the diced potatoes, mixed vegetables, beef broth, parsley, and basil to the pot. Stir everything together.
- Bring the mixture to a boil, then reduce heat and let it simmer for 25-30 minutes, or until potatoes are tender.
- Stir in the milk and butter, and cook for an additional 5 minutes. Season with salt and pepper to taste.
- Serve hot, topped with shredded cheddar cheese, if desired.
Notes
- Feel free to substitute ground turkey or chicken for the beef if preferred.
- For a thicker soup, mash some of the potatoes or use a hand blender for a smoother texture.
