Description

  • 1 lb ground beef
  • 4 medium Russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1 cup whole milk (or heavy cream for extra richness)
  • 2 tbsp butter
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • Shredded cheddar cheese (optional, for topping)

Instructions

  • In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the onions and garlic to the pot and sauté for 2-3 minutes until fragrant.
  • Add the diced potatoes, mixed vegetables, beef broth, parsley, and basil to the pot. Stir everything together.
  • Bring the mixture to a boil, then reduce heat and let it simmer for 25-30 minutes, or until potatoes are tender.
  • Stir in the milk and butter, and cook for an additional 5 minutes. Season with salt and pepper to taste.
  • Serve hot, topped with shredded cheddar cheese, if desired.
